  1. Preheat the oven to 400°F (200°C).
  2. Peel the plantains and cut them in half lengthwise.
  3. Place the plantains on a baking sheet and brush them with olive oil.
  4. Bake for 15 minutes or until they are golden brown.
  5. While the plantains are baking, prepare the filling.
  6. In a pan, heat olive oil over medium heat.
  7. Add chopped red bell pepper, red onion, and minced garlic cloves.
  8. Cook until the vegetables are soft.
  9. Add spinach leaves, ground cumin, paprika, salt, and black pepper.
  10. Cook until the spinach wilts.
  11. Remove from heat and stir in lime juice, fresh cilantro, and sliced almonds.
  12. Take the baked plantains out of the oven and let them cool slightly.
  13. Place a spoonful of the spinach filling on each plantain half.
  14. Roll up the plantains and secure them with toothpicks.
  15. Serve warm and enjoy!
