Ingredients
  • 500 gram Sweet Potatoes
  • 400 ml Coconut Milk
  • 500 ml Vegetable Broth
  • 1 medium Onion
  • 2 cloves Garlic Cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Cayenne Pepper
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Peel and chop the sweet potatoes, onion, garlic, and ginger.
  2. In a large pot, sauté the onion, garlic, and ginger until fragrant.
  3. Add the sweet potatoes, coconut milk, and vegetable broth to the pot. Bring to a boil and then reduce heat and simmer for about 20 minutes, or until the sweet potatoes are tender.
  4. Use an immersion blender or transfer the soup to a blender in batches to puree until smooth.
  5. Stir in the cayenne pepper, lime juice, salt, and black pepper.
  6. Simmer for another 5 minutes to allow the flavors to meld together.
  7. Serve the soup hot, garnished with fresh cilantro.
