Ingredients
  • 2 cup Black beans
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 medium Bell pepper
  • 1 pepper Scotch bonnet pepper
  • 1 teaspoon Thyme
  • 1 teaspoon Allspice
  • 1 leaf Bay leaf
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Lime juice
  • 2 tablespoon Cilantro
Instructions
  1. Rinse and soak the black beans overnight.
  2. In a large pot, sauté the onion, garlic, and bell pepper until softened.
  3. Add the soaked black beans, Scotch bonnet pepper, thyme, allspice, and bay leaf to the pot.
  4. Pour in the coconut milk and enough water to cover the beans.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.
  6. Season with salt and black pepper.
  7. Stir in lime juice and cilantro before serving.
  8. Let the dish rest for 10 minutes before serving.
