Ingredients
  • 1/2 cup Popcorn kernels
  • 1/2 cup Granulated sugar
  • 2 tablespoon Unsalted butter
  • 2 tablespoon Light corn syrup
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Baking soda
  • 1/4 teaspoon Salt
Instructions
  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Pop the popcorn kernels using your preferred method.
  3. In a saucepan, melt the butter over medium heat. Stir in the sugar, corn syrup, vanilla extract, and salt. Cook and stir until the mixture comes to a boil.
  4. Remove the saucepan from the heat and quickly stir in the baking soda until well combined. The mixture will foam up.
  5. Pour the caramel sauce over the popcorn and gently toss to coat evenly.
  6. Spread the coated popcorn onto the prepared baking sheet and bake for 10-15 minutes, stirring every 5 minutes.
  7. Remove from the oven and let the caramel corn cool and harden on the baking sheet.
  8. Once cooled, break apart any large clumps and serve.
