Ingredients
  • 1 head Cauliflower
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 1 teaspoon Ginger
  • 1 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 2 tablespoon Tomato Paste
  • 1 cup Coconut Milk
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 2 tablespoon Cilantro
Instructions
  1. Preheat the oven to 425°F (220°C). Cut the cauliflower into florets.
  2. Toss the cauliflower florets with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20 minutes until golden brown.
  3. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and ginger. Sauté until the onion is translucent.
  4. Add curry powder, turmeric powder, cumin powder, and coriander powder. Cook for 1 minute.
  5. Stir in tomato paste and coconut milk. Simmer for 5 minutes.
  6. Add the roasted cauliflower to the skillet and stir to coat with the curry sauce. Cook for an additional 5 minutes.
  7. Remove from heat and stir in lemon juice.
  8. Garnish with cilantro and serve hot.
