Ingredients
  • 2 cup Callaloo leaves
  • 1 can Coconut milk
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Thyme
  • 1 whole Scotch bonnet pepper
  • 1 cup Okra
  • 2 medium Tomatoes
  • 1 cup Vegetable stock
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lime juice
Instructions
  1. Wash and chop the callaloo leaves.
  2. In a large pot, heat the coconut milk over medium heat.
  3. Add the onion, garlic, thyme, and scotch bonnet pepper to the pot and cook until softened.
  4. Add the callaloo leaves, okra, tomatoes, and vegetable stock to the pot.
  5. Season with salt and black pepper.
  6. Bring the stew to a boil, then reduce the heat and simmer for 20 minutes.
  7. Stir in the lime juice.
  8. Remove the scotch bonnet pepper before serving.
  9. Serve the callaloo stew hot.
