  • 1 cup Quinoa
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 1 medium Avocado
  • 1 small Red onion
  • 0.5 cup Fresh cilantro
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Cook quinoa according to package instructions. In a large bowl, combine cooked quinoa, cucumber, cherry tomatoes, avocado, red onion, and fresh cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss to combine. Let the salad rest for 10 minutes before serving. Enjoy!
