  • 1 cup Kidney beans
  • 1 cup Black beans
  • 1 cup Garbanzo beans
  • 1 medium Onion
  • 1 medium Carrot
  • 2 medium Celery stalk
  • 2 clove Garlic cloves
  • 1 can Diced tomatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, celery, and garlic. Cook until vegetables are tender, about 5 minutes.
  3. Add paprika, cumin, salt, and black pepper. Stir well.
  4. Add kidney beans, black beans, garbanzo beans, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Serve hot, garnished with fresh parsley.
