  • 1.5 cup Sweet potatoes
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, melted
  • 1/2 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 teaspoon Vanilla extract
  • 1/2 cup Chopped pecans
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the sweet potatoes, melted butter, brown sugar, granulated sugar, egg, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt.
  4. Gradually add the dry ingredients to the sweet potato mixture, stirring until well combined.
  5. Fold in the chopped pecans.
