Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 2 stalk Celery
  • 2 clove Garlic
  • 2 tablespoon Tomato paste
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cayenne pepper
  • 1 can Crushed tomatoes
  • 1 cup Vegetable broth
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Stir in tomato paste, Cajun seasoning, thyme, oregano, paprika, and cayenne pepper. Cook for 1 minute.
  4. Add crushed tomatoes and vegetable broth. Bring to a simmer and cook for 20 minutes.
  5. Season with salt and black pepper.
  6. Serve hot, garnished with fresh parsley.
