Ingredients
  • 2 cup Red beans
  • 1 cup Rice
  • 1 medium Onion
  • 2 medium Celery stalks
  • 1 medium Green bell pepper
  • 3 clove Garlic cloves
  • 2 tablespoon Vegetable oil
  • 2 cup Vegetable broth
  • 2 tablespoon Cajun seasoning
  • 1 teaspoon Thyme
  • 2 leaf Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 stalk Green onions
Instructions
  1. Soak the red beans in water overnight. Drain and rinse.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onion, celery, and bell pepper. Cook until the vegetables are softened.
  3. Add the garlic, Cajun seasoning, thyme, bay leaves, salt, and black pepper. Cook for another minute.
  4. Add the soaked red beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 1 hour or until the beans are tender.
  5. While the beans are cooking, prepare the rice according to package instructions.
  6. Serve the Cajun red beans over the cooked rice. Garnish with chopped green onions.
