Ingredients
  • 2 cup Okra
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 stalk Celery
  • 3 clove Garlic
  • 1 can Tomatoes
  • 2 cup Vegetable broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon Thyme
  • 2 leaf Bay leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Cooked rice
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, bell pepper, celery, and garlic. Cook until vegetables are softened.
  2. Add okra, tomatoes, vegetable broth, Cajun seasoning, thyme, bay leaves, salt, and black pepper. Stir well.
  3. Bring the stew to a boil, then reduce heat and simmer for 20 minutes.
  4. Serve the Cajun Okra Stew over cooked rice.
