  • 1 head Cabbage
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 2 tablespoon Tomato Paste
  • 2 leaf Bay Leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Fresh Parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  2. Add diced potatoes, sliced carrots, and shredded cabbage. Stir well.
  3. Pour in vegetable stock and add tomato paste, bay leaves, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.
  4. Remove from heat and let it rest for 10 minutes.
  5. Serve hot, garnished with fresh parsley.
