Ingredients
  • 500 gram Butternut squash
  • 1 unit Onion
  • 2 teaspoon Ginger
  • 2 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. Peel and cut the butternut squash into cubes.
  2. Chop the onion and ginger.
  3. Heat olive oil in a large pot and sauté the onion and ginger until softened.
  4. Add the butternut squash cubes and vegetable broth to the pot.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until the squash is tender.
  6. Remove from heat and let the soup cool slightly.
  7. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  8. Return the soup to the pot and stir in coconut milk.
  9. Season with salt and black pepper to taste.
  10. Simmer for another 5 minutes to heat through.
  11. Serve hot, garnished with cilantro.
