Ingredients
  • 500 gram Butternut Squash
  • 2 teaspoon Ginger
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the butternut squash into small cubes.
  3. In a large bowl, toss the butternut squash with ginger, lemon juice, honey, salt, and black pepper.
  4. Spread the mixture on a baking sheet and roast for about 20 minutes or until the squash is tender and slightly caramelized.
  5. Remove from the oven and let it cool.
  6. Transfer the roasted squash to a food processor and pulse until desired consistency is reached.
  7. Serve as a side dish or condiment.
