Ingredients
  • 1 cup Bulgur
  • 2 cup Water
  • 1/2 cup Dried Apricots
  • 1/2 cup Dried Cranberries
  • 1/4 cup Pistachios
  • 1/4 cup Almonds
  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 tablespoon Fresh Parsley
  • 1 tablespoon Fresh Mint
Instructions
  1. In a saucepan, heat olive oil over medium heat. Add the chopped onion and cook until softened.
  2. Add the bulgur and cook for another 2 minutes, stirring constantly.
  3. Add water, cinnamon, cumin, salt, and black pepper. Bring to a boil, then reduce heat to low and cover the saucepan. Let it simmer for about 20 minutes or until the bulgur is tender and the water is absorbed.
  4. Remove from heat and let it rest for 5 minutes.
  5. In the meantime, chop the dried apricots, dried cranberries, pistachios, almonds, fresh parsley, and fresh mint.
  6. Fluff the cooked bulgur with a fork and add the chopped dried fruits, nuts, parsley, and mint. Mix well.
  7. Serve hot or at room temperature.
