Ingredients
  • 1 cup Red Lentils
  • 1 medium Onion
  • 3 clove Garlic
  • 1 teaspoon Ginger
  • 2 medium Carrot
  • 2 stalk Celery
  • 1 medium Red Bell Pepper
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cayenne Pepper
  • 4 cup Vegetable Stock
  • 2 cup Water
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Fresh Cilantro
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
Instructions
  1. Rinse the red lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion, minced garlic, and grated ginger. Cook until fragrant.
  4. Add the diced carrot, celery, and red bell pepper. Cook for 5 minutes.
  5. Stir in the cumin powder, coriander powder, turmeric powder, and cayenne pepper.
  6. Add the rinsed red lentils, vegetable stock, and water. Bring to a boil.
  7. Reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
  8. Remove from heat and let the soup rest for 5 minutes.
  9. Blend the soup using an immersion blender or transfer to a blender and blend until smooth.
  10. Stir in lemon juice, fresh cilantro, salt, and black pepper.
  11. Serve hot and enjoy!
