Ingredients
  • 1 cup Brown rice
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 cup Mixed vegetables (carrots, peas, corn)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Parsley
Instructions
  1. Rinse the brown rice under cold water.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic, sauté until fragrant.
  4. Add the rinsed rice and stir for a minute.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 25 minutes.
  7. Stir in mixed vegetables, salt, and black pepper.
  8. Cover and cook for an additional 5 minutes.
  9. Remove from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and garnish with parsley before serving.
