Ingredients
  • 2 cup Brown rice
  • 1 can Coconut milk
  • 2 cup Vegetable broth
  • 1 medium Onion
  • 3 minced Garlic cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 2 tablespoon Lime juice
  • For garnish chopped Fresh cilantro
Instructions
  1. Cook the brown rice according to package instructions.
  2. In a large pot, heat some oil over medium heat and sauté the onion until translucent.
  3. Add the minced garlic and ginger, and cook for another minute.
  4. Add the curry powder, turmeric powder, cumin powder, and cayenne pepper, and cook for a minute to release the flavors.
  5. Pour in the coconut milk and vegetable broth, and bring to a simmer.
  6. Add the cooked brown rice to the pot and stir well.
  7. Season with salt and lime juice.
  8. Let the curry simmer for about 10 minutes to allow the flavors to blend.
  9. Serve the brown rice curry hot, garnished with fresh cilantro.
