Ingredients
  • 250 gram Brown Lentils
  • 1 medium Onion
  • 2 cloves Garlic Cloves
  • 1 medium Carrot
  • 2 stalks Celery Stalks
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Turmeric Powder
  • 4 cup Vegetable Stock
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
Instructions
  1. Rinse the lentils thoroughly and soak them in water for 1 hour.
  2. In a large pot, heat olive oil and sauté the onion and garlic until golden brown.
  3. Add the carrots and celery stalks and sauté for another 5 minutes.
  4. Drain the soaked lentils and add them to the pot with the sautéed vegetables.
  5. Add cumin powder, coriander powder, turmeric powder, salt, and black pepper. Stir well.
  6. Pour in the vegetable stock and bring to a boil. Then reduce the heat and simmer for 30-40 minutes or until the lentils are cooked.
  7. Using an immersion blender, puree the soup until smooth.
  8. Stir in lemon juice and adjust seasonings if needed.
  9. Serve hot and garnish with desired toppings such as fresh coriander or a drizzle of olive oil.
