Ingredients
  • 16 ounce Firm Tofu
  • 1 cup Cilantro
  • 2 clove Garlic
  • 2 tablespoon Pine Nuts
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Preheat the broiler.
  2. Press the tofu to remove excess water, then slice into 1/2-inch thick pieces.
  3. In a blender or food processor, combine cilantro, garlic, pine nuts, lemon juice, olive oil, salt, and black pepper. Blend until smooth.
  4. Place tofu slices on a baking sheet and brush both sides with the cilantro pesto.
  5. Broil for 6-8 minutes on each side, or until tofu is golden brown.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Serve the broiled tofu with cilantro pesto as a main course or as a side dish.
