Ingredients
  • 500 gram Broccoli
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice
  • 2 tablespoon Fresh Parsley
Instructions
  1. Heat olive oil in a pot and sauté onion and garlic until translucent.
  2. Add broccoli and vegetable stock to the pot and bring to a boil.
  3. Reduce heat and simmer for 15 minutes until broccoli is tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Season with salt, black pepper, and lemon juice.
  6. Serve hot, garnished with fresh parsley.
