Ingredients
  • 500 gram Leeks
  • 2 tablespoon Olive oil
  • 1 cup Vegetable broth
  • 2 clove Garlic
  • 2 sprig Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Trim off the root and dark green parts of the leeks. Cut the remaining white and light green parts into 2-inch long pieces.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
  3. Add the leeks to the skillet, arranging them in a single layer. Cook for about 5 minutes, until they start to brown.
  4. Pour vegetable broth into the skillet and add thyme, salt, and black pepper. Bring to a simmer.
  5. Reduce the heat to low, cover the skillet, and let the leeks braise for about 20 minutes, until they are tender.
  6. Remove the lid and increase the heat to medium-high. Cook for another 5 minutes, until the liquid has evaporated and the leeks are caramelized.
  7. Serve hot as a side dish or as a topping for salads or sandwiches.
