Trim the leeks, removing the dark green parts and root ends. Cut them into 2-inch lengths and rinse well.

Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant.

Add leeks to the skillet and sauté for a few minutes until they start to soften.

Pour in vegetable stock, salt, and black pepper. Bring to a simmer, then reduce the heat to low.

Cover the skillet and let the leeks braise for about 20-25 minutes until they are tender.

Remove from heat and let the leeks rest for 5 minutes.

Sprinkle with lemon zest and fresh parsley before serving.
