Ingredients
  • 1 head Cabbage
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Tomato
  • 1 cup Vegetable broth
  • 1 cup Coconut milk
  • 1 teaspoon Curry powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Vegetable oil
Instructions
  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add curry powder, salt, and black pepper, stir well.
  4. Add chopped tomatoes and cook until they soften.
  5. Add sliced cabbage and stir to combine.
  6. Pour in vegetable broth and coconut milk, bring to a simmer.
  7. Cover the pot and let it braise for about 30 minutes, or until the cabbage is tender.
