  • 2 tablespoon Olive Oil
  • 1 medium Onion
  • 2 clove Garlic
  • 1 medium Red Bell Pepper
  • 4 ounce Cream Cheese
  • 1 cup Sour Cream
  • 1 cup Cheddar Cheese
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Parsley
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Sauté until the vegetables are softened, about 5 minutes.
  3. Add the corn kernels and cook for another 2 minutes.
  4. In a mixing bowl, combine the cream cheese, sour cream, cheddar cheese, paprika, salt, and black pepper. Mix well.
  5. Add the cooked vegetables to the cream cheese mixture and stir until well combined.
  6. Transfer the mixture to a greased baking dish and spread it evenly.
