Ingredients
  • 1 cup Black Rice
  • 1 cup Red Lentils
  • 1 cup Cherry Tomatoes
  • 1 cup Cucumber
  • 1/2 cup Red Onion
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Mint
  • 3 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Cook black rice and red lentils separately according to package instructions.
  2. In a large bowl, combine cooked black rice, cooked red lentils, cherry tomatoes, cucumber, red onion, fresh parsley, and fresh mint.
