  • 2 cup Black-eyed peas
  • 1 bunch Collard greens
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 cup Vegetable broth
  • 1 teaspoon Smoked paprika
  • 1/4 teaspoon Cayenne pepper
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. Rinse the black-eyed peas and soak them overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic cloves. Sauté until fragrant.
  4. Drain the soaked black-eyed peas and add them to the pot.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat to low, cover the pot, and simmer for 30 minutes.
  7. Meanwhile, wash and chop the collard greens.
  8. After 30 minutes, add the collard greens to the pot.
  9. Season with smoked paprika, cayenne pepper, salt, and black pepper.
  10. Cover the pot and simmer for another 15 minutes or until the peas and greens are tender.
  11. Remove from heat and let it rest for 5 minutes.
  12. Serve hot and enjoy!
