Ingredients
  • 2 cup Black-eyed peas
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 stalk Celery stalks
  • 1 can Tomatoes
  • 2 leaf Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse and drain the black-eyed peas.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.
  4. Add black-eyed peas, vegetable broth, tomatoes, bay leaves, thyme, paprika, cayenne pepper, salt, and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 40 minutes, or until peas are tender.
  6. Remove bay leaves and stir in fresh parsley.
  7. Let the stew rest for 10 minutes before serving.
  8. Serve hot and enjoy!
