  • 2 cup Black-eyed peas
  • 1 cup Red bell pepper
  • 1 cup Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 cup Red onion
  • 0.5 cup Fresh parsley
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
Instructions
  1. Rinse and drain the black-eyed peas.
  2. Chop the red bell pepper, cucumber, cherry tomatoes, red onion, and fresh parsley.
  3. In a large bowl, combine the black-eyed peas, chopped vegetables, and fresh parsley.
  4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
