Ingredients
  • 1 cup Black beans
  • 2 large Sweet potatoes
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, bell pepper, and red onion.
  3. In a large bowl, toss the sweet potatoes, bell pepper, and red onion with olive oil, cumin, chili powder, and salt.
  4. Spread the mixture onto a baking sheet and roast for 25-30 minutes, or until the sweet potatoes are tender and slightly crispy.
  5. In a separate bowl, combine the black beans, cilantro, and lime juice.
  6. Once the sweet potatoes are done, remove them from the oven and let them rest for 5 minutes.
  7. Serve the roasted sweet potatoes with the black bean mixture on top. Enjoy!
