Ingredients
  • 2 cup Black beans
  • 1 cup Corn kernels
  • 1 cup Red bell pepper
  • 1 cup Red onion
  • 1 cup Cherry tomatoes
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a pan over medium heat.
  2. Add red onion and red bell pepper, sauté until softened.
  3. Add corn kernels and cherry tomatoes, cook for 2 minutes.
  4. Stir in black beans, lime juice, salt, and black pepper.
  5. Cook for another 5 minutes, stirring occasionally.
  6. Remove from heat and let it rest for 5 minutes.
  7. Garnish with fresh cilantro.
  8. Serve hot and enjoy!
