Ingredients
  • 2 cup Black Beans
  • 1 medium Onion
  • 2 clove Garlic
  • 2 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 4 cup Vegetable Stock
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Olive Oil
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Rinse and soak the black beans overnight.
  2. In a large pot, heat olive oil and sauté onion and garlic until translucent.
  3. Add cumin powder and coriander powder, and cook for another minute.
  4. Drain and rinse the soaked black beans, then add them to the pot.
  5. Pour in vegetable stock and bring to a boil.
  6. Reduce heat and simmer for 30 minutes, or until the beans are tender.
  7. Use an immersion blender or a regular blender to blend the soup until smooth.
  8. Stir in lime juice, salt, and black pepper.
  9. Garnish with fresh cilantro and serve hot.
