Ingredients
  • 2 cup Black beans
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 minced Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, cumin, and chili powder and cook for another minute.
  2. Add black beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Use an immersion blender or transfer the soup to a blender and puree until smooth.
  4. Stir in lime juice and salt. Cook for an additional 5 minutes.
  5. Serve hot with your choice of toppings, such as sour cream, chopped cilantro, or diced avocado.
