Ingredients
  • 1 cup Black beans
  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 2 tablespoon Sugar
  • 2 tablespoon Egg substitute
  • 2 tablespoon Vegetable oil
  • 1 cup Unsweetened almond milk
  • 1/2 cup Corn kernels
  • 1/4 cup Chopped green onions
  • 1 tablespoon Chopped jalapeno pepper
Instructions
  1. Preheat the oven to 375°F (190°C). In a large bowl, combine the black beans, cornmeal, all-purpose flour, baking powder, salt, and sugar. In a separate bowl, whisk together the egg substitute, vegetable oil, and almond milk. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the corn kernels, green onions, and jalapeno pepper. Spoon the batter into a greased muffin tin, filling each cup about 3/4 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
