Ingredients
  • 2 cup Black Beans
  • 1 cup Roasted Red Peppers
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Lime Juice
  • 2 tablespoon Cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add roasted red peppers, black beans, cumin, paprika, salt, and black pepper. Stir well.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  4. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  5. Stir in lime juice and cilantro. Simmer for an additional 5 minutes.
  6. Serve hot and garnish with additional cilantro if desired.
