Ingredients
  • 1 cup Black beans
  • 1 cup White beans
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Carrot
  • 2 stalk Celery stalks
  • 4 cup Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lime juice
Instructions
  1. Rinse and drain the black and white beans.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, minced garlic, sliced carrot, and diced celery stalks. Cook until vegetables are tender.
  4. Add cumin, paprika, salt, and black pepper. Stir well.
  5. Add the rinsed beans and vegetable broth to the pot. Bring to a boil.
  6. Reduce heat to low and simmer for 20-25 minutes, or until beans are tender.
  7. Use an immersion blender or transfer a portion of the soup to a blender and blend until smooth.
  8. Return the blended soup to the pot and stir well.
  9. Add lime juice and fresh cilantro. Stir and cook for an additional 5 minutes.
  10. Serve hot and enjoy!
