Ingredients
  • 500 gram Bitter melon
  • 1 medium-sized Onion
  • 2 medium-sized Tomato
  • 2 small Green chili
  • 1 inch Ginger
  • 4 medium-sized Garlic cloves
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Salt
  • 2 tablespoon Oil
  • 2 tablespoon Fresh coriander leaves
Instructions
  1. Cut the bitter melon lengthwise, remove the seeds, and slice it into thin pieces. Heat oil in a pan and add the bitter melon slices. Stir-fry until they turn slightly brown. Remove the bitter melon from the pan and set aside. In the same pan, add chopped onion, green chili, ginger, and garlic. Saute until the onion turns translucent. Add chopped tomatoes and cook until they become soft. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well. Add the stir-fried bitter melon slices and cook for a few more minutes. Garnish with fresh coriander leaves. Serve hot with rice or roti.
