Ingredients
  • 500 gram Potatoes
  • 300 gram Carrots
  • 2 piece Bell peppers
  • 1 piece Zucchini
  • 1 piece Red onion
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Mixed herbs
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Wash and chop all the vegetables into bite-sized pieces.
  3. In a large bowl, toss the vegetables with olive oil, salt, black pepper, and mixed herbs.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the preheated oven for 30 minutes, or until the vegetables are tender and slightly browned.
  6. Remove from the oven and let them rest for 5 minutes.
