Ingredients
  • 1 head Cabbage
  • 2 medium Carrots
  • 1 large Onion
  • 2 clove Garlic
  • 2 medium Potatoes
  • 4 cup Vegetable broth
  • 2 piece Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrots, potatoes, and cabbage. Stir and cook for 5 minutes.
  3. Pour in vegetable broth, add bay leaves and thyme. Season with salt and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes or until vegetables are tender.
  5. Remove bay leaves. Use an immersion blender to blend the soup until smooth.
  6. Serve hot with crusty bread.
