Ingredients
  • 500 gram Okra
  • 1 medium Onion
  • 2 medium Tomato
  • 2 piece Green Chili
  • 1 inch Ginger
  • 3 cloves Garlic
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Red Chili Powder
  • 1 teaspoon Garam Masala Powder
  • 1 teaspoon Salt
  • 2 tablespoon Oil
  • 2 tablespoon Fresh Coriander Leaves
Instructions
  1. Wash the okra and pat dry. Cut off the ends and slice them vertically.
  2. Heat oil in a pan and add the sliced okra. Stir fry on medium heat until they become tender and slightly crispy. Remove from the pan and set aside.
  3. In the same pan, add more oil if needed and sauté the chopped onions until golden brown.
  4. Add ginger, garlic, and green chilies. Sauté for a minute.
  5. Add chopped tomatoes and cook until they become soft and mushy.
  6. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
  7. Add the stir-fried okra back to the pan and mix gently to coat the spices.
  8. Cover the pan and let it cook for 5 minutes on low heat.
  9. Sprinkle garam masala powder and mix well.
  10. Garnish with fresh coriander leaves.
  11. Bhindi Bhaji is ready to be served with roti or rice.
