Ingredients
  • 2 cup Lima beans
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 cup Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley
Instructions
  1. Rinse the lima beans and soak them overnight.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until golden brown.
  3. Drain the soaked lima beans and add them to the pot. Stir well.
  4. Pour in vegetable broth and season with salt and black pepper. Bring to a boil.
  5. Reduce heat to low, cover the pot, and simmer for about 30 minutes or until the beans are tender.
  6. Remove from heat and let it rest for 5 minutes.
  7. Stir in lemon juice and garnish with fresh parsley.
  8. Serve hot and enjoy!
