Ingredients
  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalk Celery stalk
  • 3 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 2 leaf Bay leaves
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are softened, about 5 minutes.
  3. Add tomato paste, cumin, paprika, salt, and black pepper. Stir well to combine.
  4. Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  5. Remove bay leaves and stir in lemon juice.
  6. Serve hot, garnished with fresh parsley. Enjoy!
