Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 medium Carrot
  • 2 medium Celery stalks
  • 3 clove Garlic cloves
  • 4 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 2 leaf Bay leaves
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are tender.
  4. Add tomato paste, cumin, paprika, bay leaves, salt, and black pepper. Stir well.
  5. Add rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes.
  6. Remove bay leaves and stir in fresh parsley and lemon juice.
  7. Let the soup rest for 5 minutes before serving.
  8. Serve hot and enjoy!
