Ingredients
  • 4 cup Broccoli
  • 2 cup Vegetable broth
  • 1 small Onion
  • 2 clove Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Nutmeg
  • 1 tablespoon Lemon juice
  • 1 cup Almond milk
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.
  2. Add broccoli florets and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes or until broccoli is tender.
  3. Using an immersion blender or regular blender, blend the soup until smooth and creamy.
  4. Stir in almond milk, lemon juice, salt, black pepper, and nutmeg. Heat the soup for a few more minutes until warmed through.
