  • 1 pound Beets
  • 2 tablespoon Olive oil
  • 2 tablespoon Balsamic vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh parsley
Instructions
  1. Preheat the grill to medium-high heat.
  2. Peel and slice the beets into 1/4-inch thick rounds.
  3. In a bowl, combine olive oil, balsamic vinegar, salt, and black pepper.
  4. Brush both sides of the beet slices with the olive oil mixture.
  5. Place the beet slices on the grill and cook for about 5-7 minutes per side, or until tender.
  6. Remove the beets from the grill and let them rest for 5 minutes.
  7. Sprinkle fresh parsley on top before serving.
