Ingredients
  • 500 gram Beets
  • 1 piece Onion
  • 2 clove Garlic
  • 4 cup Vegetable broth
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoon Sour cream
  • 2 tablespoon Fresh dill
Instructions
  1. Peel and chop the beets, onion, and garlic.
  2. In a large pot, sauté the onion and garlic until fragrant.
  3. Add the beets and vegetable broth to the pot.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the beets are tender.
  5. Remove from heat and let cool slightly.
  6. Using an immersion blender or regular blender, blend the soup until smooth.
  7. Stir in the lemon juice, salt, and black pepper.
  8. Serve hot, garnished with a dollop of sour cream and fresh dill.
