Ingredients
  • 8 ounce Beets
  • 1 can Chickpeas
  • 2 tablespoon Tahini
  • 2 clove Garlic
  • 2 tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • to taste Black Pepper
Instructions
  1. Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast them for about 45 minutes, or until tender. Let them cool, then peel and chop.
  2. Rinse and drain the chickpeas.
  3. In a food processor, combine the roasted beets, chickpeas, tahini, garlic, lemon juice, olive oil, cumin, salt, and black pepper. Blend until smooth and creamy.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the beet hummus to a serving dish and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve with pita bread, crackers, or vegetable sticks.
