Ingredients
  • 2 cup Red kidney beans
  • 1 can Coconut milk
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 1 teaspoon Curry powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Vegetable oil
Instructions
  1. Soak the red kidney beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat vegetable oil over medium heat.
  4. Add chopped onion and minced garlic cloves. Cook until onion is translucent.
  5. Add tomato paste, curry powder, salt, and black pepper. Stir well.
  6. Add the soaked beans and coconut milk to the pot. Stir to combine.
  7. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes or until beans are tender.
  8. Remove from heat and let it rest for 5 minutes.
  9. Garnish with fresh cilantro before serving.
  10. Serve hot with rice or bread.
