Ingredients
  • 15 ounce Canned beans (kidney, black, or garbanzo)
  • 1 cup Cherry tomatoes
  • 1 small Red onion
  • 1 small Cucumber
  • 2 ounce Sun-dried tomatoes
  • 1 cup Fresh basil leaves
  • 2 tablespoon Olive oil
  • 2 tablespoon Red wine vinegar
  • 2 clove Garlic cloves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Drain and rinse the canned beans.
  2. Cut the cherry tomatoes in half.
  3. Thinly slice the red onion.
  4. Dice the cucumber.
  5. In a large bowl, combine the beans, cherry tomatoes, red onion, cucumber, and sun-dried tomatoes.
  6. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, salt, and black pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Garnish with fresh basil leaves.
  9. Serve chilled.
